We kindly inform you that IRTA (Research & Technology in food and agriculture) organizes in Monells, Spain, a demonstration sesion about reduction of salt in hams dedicated to European ham producers, based on the results obtained in the TRUEFOOD project (Traditional United Europe Food Project).
The proposed demonstration session offers professionals the opportunity to learn about and discuss the last research results in dry-cured ham technology.
The use of new technologies for the selection of raw hams and the design and optimization of new processes to facilitate the achievement of products with a reduced salt content and without sensory defects will be demonstrated.
Date: 24th February 2010.
The session will be done in English language and the number of participants is limited.
